Vegan Currywurst

- 1 package vegan sausage such as Tofurky brand
- 1 cup tomato sauce
- 1 tbsp curry powder
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp brown sugar
- Salt and pepper to taste
- 4-6 vegan brat buns
- Grilled onions and bell peppers (optional)
- Vegan mayonnaise or mustard (optional)
- Chopped fresh herbs (optional) such as cilantro or parsley
Preheat your grill or a grill pan over medium heat.
Grill the vegan sausages for about 5-7 minutes on each side, or until they are heated through and have grill marks.
In a small saucepan, combine the tomato sauce, curry powder, paprika, garlic powder, onion powder, and brown sugar. Bring the sauce to a simmer and let it cook for about 5 minutes, or until it thickens slightly.
Slice the grilled vegan sausages into 1/2 inch slices.
Assemble the currywursts by placing the sausage slices onto the vegan brat buns (if desired) and spooning the curry sauce over the top. Serve immediately.
