Vegan Collard Greens Instant Pot

Ingredients
  

  • 1 pound collard greens stemmed and chopped
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 4 cloves garlic minced
  • 2 tablespoons apple cider vinegar
  • 1 cup vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes optional

Instructions
 

  • Heat the olive oil in the Instant Pot on the "saute" setting.
  • Add the onion and garlic and cook for 2-3 minutes until they are softened.
  • Add the collard greens, apple cider vinegar, vegetable broth, salt, black pepper, and red pepper flakes (if using) to the Instant Pot.
  • Close the Instant Pot and set it to the "manual" setting for 5 minutes.
  • When the cooking time is finished, carefully release the pressure using the quick release valve.
  • Serve the collard greens hot, with your choice of additional toppings such as diced tomatoes or sliced avocado.

Notes

This recipe serves 4-6 people and can be easily doubled or tripled to serve a larger group. It can be enjoyed as a side dish or as a main course when served with a grain or legume. The collard greens can also be stored in the refrigerator for up to 3 days or in the freezer for up to 3 months. Enjoy!
