1cupraw cashewssoaked in water for at least 4 hours or overnight
1/4cuplemon juice
2tbspvegan cream cheese
2tbspcoconut oilmelted
2tbspagave nectar or maple syrup

Instructions
Drain and rinse the soaked cashews.
In a blender or food processor, combine the cashews, lemon juice, vegan cream cheese, melted coconut oil, agave nectar or maple syrup, vanilla extract, and salt.
Blend until smooth and creamy, scraping down the sides as necessary. If the mixture is too thick, add a little non-dairy milk to thin it out.
Taste and adjust sweetness or lemon juice as desired.
Use immediately or store in an airtight container in the refrigerator for up to 5 days.
