Vegan Mascarpone Frosting

Ingredients
  

  • 1 cup raw cashews soaked in water for at least 4 hours or overnight
  • 1/4 cup lemon juice
  • 2 tbsp vegan cream cheese
  • 2 tbsp coconut oil melted
  • 2 tbsp agave nectar or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Drain and rinse the soaked cashews.
  • In a blender or food processor, combine the cashews, lemon juice, vegan cream cheese, melted coconut oil, agave nectar or maple syrup, vanilla extract, and salt.
  • Blend until smooth and creamy, scraping down the sides as necessary. If the mixture is too thick, add a little non-dairy milk to thin it out.
  • Taste and adjust sweetness or lemon juice as desired.
  • Use immediately or store in an airtight container in the refrigerator for up to 5 days.
