Damson Plum Preserves

Damson plum preserves are a delicious and versatile condiment that can be used in a variety of ways.

Ingredients
  

  • 2 lbs of damson plums
  • 2 cups of granulated sugar
  • 1/2 cup of water
  • 1 teaspoon of lemon juice

Instructions
 

  • Start by washing and pit the damson plums.
  • In a large pot, combine the sugar, water, and lemon juice over medium heat. Stir until the sugar is completely dissolved.
  • Add the plums to the pot and bring the mixture to a boil.
  • Reduce the heat and let the plums simmer for about 15-20 minutes, or until they are tender and the mixture has thickened.
  • Remove the pot from the heat and let it cool for a few minutes.
  • Using a hand-held immersion blender, or transfer the mixture to a stand blender, puree the plums until smooth.
  • Return the puree to the pot and bring it to a boil again.
  • Reduce the heat and let it simmer for an additional 10-15 minutes, or until the mixture has thickened even more.
  • Remove the pot from the heat and let it cool for a few minutes.
  • Carefully ladle the preserves into sterilized jars, leaving about 1/4 inch of headspace.
  • Seal the jars and let them cool completely before storing in the refrigerator for up to 6 months.

Notes

Enjoy your homemade damson plum preserves on toast, mixed with yogurt or ice-cream or even as a topping for pancakes and waffles.
Note: To sterilize jars, wash them in hot soapy water, then rinse them. Dry the jars and place them in a preheated oven at 350°F for 10 minutes.
