Ingredients
  

  • 2 pounds of fresh damson plums pitted and halved
  • 1 cup of water
  • 2 tablespoons of lemon juice
  • 1 teaspoon of vanilla extract
  • 1 cup of sugar-free sweetener such as erythritol or stevia
  • 1 tablespoon of chia seeds optional

Instructions
 

  • In a large saucepan, combine the halved damson plums, water, lemon juice, and vanilla extract.
  • Cook the mixture over medium heat, stirring occasionally, until the plums start to break down and become soft, about 10-15 minutes.
  • Using a potato masher, mash the plums to a chunky consistency.
  • Stir in the sugar-free sweetener and continue to cook the mixture until it starts to thicken, about 15-20 minutes.
  • If using, stir in the chia seeds and continue to cook for another 5 minutes.
  • Remove the pan from heat and let the jam cool completely.
  • Once cooled, transfer the jam to a clean glass jar and store in the refrigerator for up to one month.
