- 4 cups fresh damson plums pitted and halved
- 1 cup granulated sugar
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Preheat oven to 375°F (190°C).
Roll out pie dough and place in a 9-inch pie dish. Trim and crimp the edges.
Arrange the halved damson plums in the pie dish.
In a medium saucepan, melt the sugar over medium heat until it becomes a deep amber color, stirring constantly.
Add the butter and stir until melted.
Remove the saucepan from heat and slowly pour in the heavy cream while stirring.
Add the vanilla extract and salt and stir until well combined.
Pour the caramel mixture over the plums.
Place the pie on a baking sheet and bake for 45-50 minutes or until the crust is golden brown.
Allow the pie to cool completely before serving. Serve with a scoop of ice cream or whipped cream if desired.
