Damson Caramel Pie Recipe

Ingredients
  

  • 1 recipe for 9 inch pie crust
  • 4 cups fresh damson plums pitted and halved
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Roll out pie dough and place in a 9-inch pie dish. Trim and crimp the edges.
  • Arrange the halved damson plums in the pie dish.
  • In a medium saucepan, melt the sugar over medium heat until it becomes a deep amber color, stirring constantly.
  • Add the butter and stir until melted.
  • Remove the saucepan from heat and slowly pour in the heavy cream while stirring.
  • Add the vanilla extract and salt and stir until well combined.
  • Pour the caramel mixture over the plums.
  • Place the pie on a baking sheet and bake for 45-50 minutes or until the crust is golden brown.
  • Allow the pie to cool completely before serving. Serve with a scoop of ice cream or whipped cream if desired.
