Ingredients
  

  • 3 ripe bananas mashed
  • 1/3 cup melted coconut oil or vegan butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup almond or oat flour
  • 1/2 cup whole wheat flour
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 cup chopped walnuts or pecans optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large bowl, combine the mashed bananas, melted coconut oil or vegan butter, and vanilla extract.
  • In a separate bowl, whisk together the baking soda, salt, almond or oat flour, whole wheat flour, cinnamon, and baking powder.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chopped nuts, if using.
  • Pour the batter into the prepared loaf pan and smooth out the top.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • Slice and enjoy the delicious, whole food plant-based banana bread!
