Ingredients
  

  • 1 bunch collard greens stems removed and leaves roughly chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 tablespoon oil
  • 1 medium onion finely chopped
  • 1 tablespoon grated ginger
  • 2 cloves garlic minced
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 cup water

Instructions
 

  • Heat the oil in a large pan over medium heat. Add the mustard seeds and cumin seeds and cook until they start to pop.

  • Add the onion, ginger, and garlic and cook until the onion is translucent.

  • Stir in the turmeric and garam masala and cook for another minute.

  • Add the collard greens and stir to coat them with the spice mixture.

  • Add the water and bring to a boil. Reduce the heat to low and simmer for about 10 minutes, or until the collard greens are tender.

  • Season with salt to taste and serve hot.
