Heat the oil in a large pan over medium heat. Add the mustard seeds and cumin seeds and cook until they start to pop.

Add the onion, ginger, and garlic and cook until the onion is translucent.

Stir in the turmeric and garam masala and cook for another minute.

Add the collard greens and stir to coat them with the spice mixture.

Add the water and bring to a boil. Reduce the heat to low and simmer for about 10 minutes, or until the collard greens are tender.
