In a small bowl, mix together the chia seeds and plant-based milk. Let the mixture sit for about 5 minutes until it forms a gel-like consistency.
In a separate bowl, mix together the flour, baking powder, and salt.
Add the chia seed mixture, apple cider vinegar, vanilla extract, and maple syrup (if using) to the dry ingredients and stir until well combined.
Heat a non-stick pan over medium heat. Once hot, spoon 1/4 cup of the pancake batter onto the pan for each pancake.
Cook the pancakes for 2-3 minutes on each side, or until they are golden brown and cooked through.
Serve the pancakes hot with your choice of toppings, such as maple syrup, fruit, or vegan butter.

Note: You may need to adjust the amount of plant-based milk used depending on the consistency of the batter. If it is too thick, you can add a little more milk to thin it out. If it is too thin, you can add a little more flour to thicken it up.
