Ingredients
  

  • 1 large ripe tomato sliced

  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • On a large plate or platter, arrange the tomato slices, avocado slices, and vegan mozzarella cheese.
  • Scatter the basil leaves over the top.
  • Drizzle the olive oil and balsamic vinegar over the salad.
  • Sprinkle with salt and pepper to taste.

Notes

Optional additions:
You can also add sliced red onions, or roasted cherry tomatoes for added flavor.
