Ingredients
  

  • 4 cups of crushed damson plums about 2 lbs of whole plums
  • 4 cups of granulated sugar
  • 1/4 cup of lemon juice
  • 1 package of powdered pectin

Instructions
 

  • Start by washing and pit the damson plums. Crush the plums in a blender or food processor until they reach a smooth consistency.
  • In a large mixing bowl, combine the crushed plums, sugar, lemon juice, and powdered pectin. Mix well to ensure that the pectin is fully incorporated.
  • Let the mixture sit for 10 minutes to allow the sugar to dissolve.
  • Ladle the mixture into clean, airtight containers or jars, leaving about 1/2 inch of headspace.
  • Seal the containers or jars and let them sit at room temperature for 24 hours.
  • After 24 hours, place the containers or jars in the freezer. The jam will keep for up to 1 year in the freezer.

Notes

When ready to use, remove the jam from the freezer and thaw it in the refrigerator. Enjoy your homemade damson plum freezer jam on toast, mixed with yogurt or ice-cream or even as a topping for pancakes and waffles.
