Vegan Tiramisu (Silken Tofu)

Ingredients
  

  • 1 lb Silken Tofu
  • 1 cup vegan cream cheese
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • 1 tsp lemon juice
  • 2 cups brewed espresso or strong coffee
  • 3 tbsp rum or coffee liqueur
  • 3 tbsp cocoa powder
  • 1 package vegan ladyfingers or sponge cake

Instructions
 

  • In a blender or food processor, puree the silken tofu until smooth.
  • In a separate bowl, mix together the vegan cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth.
  • Combine the tofu puree and cream cheese mixture, stirring until well combined.
  • In a shallow dish, mix together the brewed espresso or coffee and rum or coffee liqueur.
  • Dip each ladyfinger or piece of sponge cake into the coffee mixture for a few seconds on each side, making sure not to soak them for too long.
  • Arrange half of the ladyfingers or sponge cake in the bottom of an 8-inch square baking dish.
  • Spread half of the tofu mixture evenly over the ladyfingers or sponge cake.
  • Repeat with another layer of soaked ladyfingers or sponge cake and tofu mixture.
  • Refrigerate for at least 2 hours, or until set.
  • Dust the top with cocoa powder before serving.
