- 2 cups fresh or frozen damson plums pitted and halved
- 1/4 cup granulated sugar
- 1 tsp cornstarch
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup light brown sugar
- 1/2 cup unsalted butter cold and cubed
- 1 tsp ground cinnamon optional
In a medium-sized saucepan, combine the damson plums, granulated sugar, cornstarch, and vanilla extract. Cook over medium heat, stirring occasionally, until the mixture thickens and the plums are tender, about 10 minutes.
In a large mixing bowl, combine the flour, rolled oats, brown sugar, butter, and cinnamon (if using). Use your hands or a pastry cutter to rub the butter into the dry ingredients until it resembles coarse crumbs.
Pour the cooked damson mixture into a 9x9 inch baking dish. Sprinkle the crumble mixture evenly over the top.
Bake for 25-30 minutes, or until the top is golden brown and the filling is bubbly.
Serve warm with ice cream or whipped cream, if desired.
