Ingredients
  

  • 2 cups fresh or frozen damson plums pitted and halved
  • 1/4 cup granulated sugar
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup light brown sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 tsp ground cinnamon optional

Instructions
 

  • In a medium-sized saucepan, combine the damson plums, granulated sugar, cornstarch, and vanilla extract. Cook over medium heat, stirring occasionally, until the mixture thickens and the plums are tender, about 10 minutes.
  • In a large mixing bowl, combine the flour, rolled oats, brown sugar, butter, and cinnamon (if using). Use your hands or a pastry cutter to rub the butter into the dry ingredients until it resembles coarse crumbs.
  • Pour the cooked damson mixture into a 9x9 inch baking dish. Sprinkle the crumble mixture evenly over the top.
  • Bake for 25-30 minutes, or until the top is golden brown and the filling is bubbly.
  • Serve warm with ice cream or whipped cream, if desired.
