Ingredients
  

  • 1 sheet of frozen puff pastry thawed
  • 4-5 medium plums pitted and cut into wedges
  • 1/2 cup granulated sugar
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • Pinch of salt
  • 1 tbsp cornstarch

Instructions
 

  • Preheat oven to 400°F.
  • In a 10-inch oven-safe skillet, melt the butter over medium heat.
  • Stir in the sugar, vanilla extract, cinnamon, ginger, and salt until the sugar dissolves.
  • Add the plums to the skillet, arranging them in a single layer, cut side down.
  • Sprinkle the cornstarch over the plums and cook for 5-7 minutes, or until the plums are slightly softened and the sauce has thickened.
  • Roll out the puff pastry on a lightly floured surface until it's about 1/4 inch thick and about 2 inches larger than the skillet.
  • Place the puff pastry over the plums, tucking in the edges around the edges of the skillet.
  • Bake for 20-25 minutes or until the pastry is puffed and golden brown.
  • Remove from oven and let cool for 10 minutes.
  • Place a serving plate over the skillet and carefully invert the tarte tatin onto the plate.
  • Serve warm with a scoop of vanilla ice cream, if desired. Enjoy!
