Chickpea and Spinach Curry

- 1 can chickpeas drained and rinsed
- 1 tbsp coconut oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 tbsp grated ginger
- 2 tbsp curry powder
- 1 can coconut milk
- 1 cup vegetable broth
- 4 cups fresh spinach
- Salt and pepper to taste
- Fresh cilantro for garnish
Heat the coconut oil in a large pot over medium heat.
Add the onion, garlic, and ginger, and sauté until the onion is soft.
Stir in the curry powder and cook for another minute.
Add the chickpeas, coconut milk, and vegetable broth. Bring to a simmer and cook for 10 minutes.
Add the spinach and cook until wilted.
Season with salt and pepper, and garnish with fresh cilantro before serving.
