Tofu Scramble with Vegetables

- 1 block firm tofu drained and crumbled
- 1 tbsp olive oil
- 1 onion diced
- 1 bell pepper diced
- 1 cup mushrooms sliced
- 1 cup spinach
- 1 tsp turmeric
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Heat the olive oil in a large skillet over medium heat.
Add the onion and bell pepper, and sauté until softened.
Add the mushrooms and cook until they release their moisture.
Stir in the crumbled tofu, turmeric, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring frequently.
Add the spinach and cook until wilted.
Garnish with fresh parsley before serving.
