Vegan Burrata Salad

This vegan burrata salad is a refreshing and light summertime dish. The combination of the creamy vegan Burrata or Stracciatella cheese, juicy cherry tomatoes, and aromatic basil creates a flavorful and satisfying meal.

Ingredients
  

  • 1 batch vegan Burrata or Stracciatella cheese see previous recipe
  • 1 pint cherry tomatoes halved
  • 1 cup arugula
  • 1/4 cup chopped fresh basil
  • 1 tbsp balsamic vinegar
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Prepare the vegan Burrata or Stracciatella cheese according to the previous recipe.
  • In a bowl, combine the cherry tomatoes, arugula, and basil.
  • Add the balsamic vinegar, olive oil, salt, and pepper to the bowl and toss to coat the vegetables.
  • Divide the salad among serving plates.
  • Use your hands to tear the vegan Burrata or Stracciatella cheese into small pieces and place on top of the salads.
  • Serve and enjoy!
