Vegan Burrata Salad
Ingredients
- 1 batch vegan Burrata or Stracciatella cheese see previous recipe
- 1 pint cherry tomatoes halved
- 1 cup arugula
- 1/4 cup chopped fresh basil
- 1 tbsp balsamic vinegar
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- Prepare the vegan Burrata or Stracciatella cheese according to the previous recipe.
- In a bowl, combine the cherry tomatoes, arugula, and basil.
- Add the balsamic vinegar, olive oil, salt, and pepper to the bowl and toss to coat the vegetables.
- Divide the salad among serving plates.
- Use your hands to tear the vegan Burrata or Stracciatella cheese into small pieces and place on top of the salads.
- Serve and enjoy!
