Vegan Tempeh Tacos
Ingredients
- 1 block tempeh crumbled
- 1 tbsp olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Corn tortillas
Toppings:
- avocado salsa, shredded lettuce, fresh cilantro
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the crumbled tempeh, soy sauce, lime juice, chili powder, cumin, salt, and pepper. Cook for 10-15 minutes, stirring occasionally.
- Warm the corn tortillas in a dry skillet or microwave.
- Fill each tortilla with the tempeh mixture and top with avocado, salsa, shredded lettuce, and fresh cilantro.
