  • 2 cups of damson plums pitted and halved
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup unsalted butter chilled and cut into small pieces
  • 2-3 tablespoons ice water
  • 2 tablespoons cornstarch
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 egg beaten (for egg wash)

  • Preheat the oven to 375Ā°F (190Ā°C).
  • In a medium-sized bowl, whisk together the flour, salt, and sugar.
  • Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
  • Add the ice water, 1 tablespoon at a time, mixing until the dough comes together in a ball.
